As we can’t  know exactly how much there will be, we are selling it in % of total cut available. For example, you could order 50% of the topside (estimated at 500g). The table below has estimations of how much of each cut will be available.


 

 

 

MURRAY GREY MANAGEMENT

 

Enkidu Farm Management Principles

Enkidu Farm, with its’ 105 year old stately weatherboard farm house, is nestled below the 734 metre high Herring Back in Cooks Rivulet valley.  The 16 hectare property includes lush creek flat meadows, ridge top pastures and areas of remnant forest.  The farm management principles include:

 

·         To produce small quantities of high quality food.

·         To foster local production and supply chains.

·         To increase the carbon uptake of soils and forests.

·         To enhance biological cycles by involving microorganisms, soil flora and fauna, plants and animals within the farming system.

·         To maintain long-term fertility and sustainability of soils.

·         To encourage development of an ecologically valuable and sustainable aquatic ecosystem for Cooks Rivulet.

·         To provide living conditions that allows animals to express the basic aspects of their instincts and behaviour.

 

Regenerative Land Management

Enkidu Farm environmental practices have been adopted in order to restore the biodiversity and biological balance in the soils, remnant forests and water courses.

 

Pastures for our small herd of Murray Greys are fertilised with poultry manure annually in autumn.  The cattle are regularly rotated between paddocks to prevent over grazing of any areas and to maximise pasture growth.  This approach has improved the biological activity in the soils which in turn has improved the quality of the pastures.

 

Forested areas, which comprise about 10% of the property, were fenced in 2001 to exclude domestic stock and allow for the eucalypt understory to regenerate.  As these areas recover from a history of grazing and regular burning, weed management is continuing to provide further improvement of the quality of these forest areas.  Also in 2001, willows were removed from along Cooks Rivulet.  On Enkidu Farm, sections of the watercourse have been fenced to exclude domestic stock and the riparian area has been replanted with native vegetation.

 

Animal Ethics and Welfare

Enkidu Farm Murray Grey cattle are grass fed only.  They are hormone growth promotant (HGP) free and are not fed any supplementary feed materials that may contain animal fats such as tallow.  The Murray Greys are not subject to drenching because pasture management has ensured that they are parasite-free.

 

During winter, light snow falls occasionally occur on Enkidu Farm.  Shelter belts, comprised of native trees, have been established in all paddocks.  In addition, the Murray Greys have access to sheds where they have protection from rain and wind.

 

Calving occurs during late Spring.  The calves are electronically ear tagged in accordance with the National Livestock Identification System (NLIS) within 48 hours of being born and marked as required.  The calves suckle their mothers until they are weaned during late winter, when they are about 8 months old.  They continue to feed on pasture grasses until they are consigned to local buyers, through a local abattoir.
